A good vanilla pod is recognised first of all by its feel and its scent. Here are the simple checks to make before buying, and the most common traps.
1. Suppleness
A quality pod is supple: you can wrap it around a finger without it breaking. A stiff, dry or brittle pod has lost some of its moisture and aromas.
2. Appearance
Look for a glossy pod, dark brown to black, with an even surface. Some fine frost marks may appear: these are vanillin crystals, not mould. Beware of stains, sticky areas or fermentation smells.

3. Scent
This is the best test. A good pod smells of vanilla in a rich, round way: notes of chocolate, caramel, candied fruit or honey depending on the origin. A very faint smell, or one of alcohol, smoke or mustiness, is a bad sign.
4. Origin and preparation
A pod cured for several months develops more of its aromas. Our Gourmet pods are cured for at least 9 months, our TK pods for more than 8 months. They come from the Comoros, from the Vanilla planifolia species, and are 100% natural, with no additives or preservatives.
5. The figures
Two data points allow comparison: vanillin content and moisture content. For our Gourmet pods: vanillin from 1.8% to 2.4% and moisture from 30 to 35%. For our TK pods: vanillin from 1.5% to 2.2% and moisture from 25 to 30%. A serious seller should be able to give you this information.
6. Price
Vanilla is a slow, manual production. An abnormally low price should alert you: dry pods, little scent, or uncertain origin. Always compare the price by weight and quality, not just by number of pods.
7. Storing it well
Away from light and moisture, in an airtight container. Read our guide: how to store and use your vanilla pods.
Gourmet or TK?
Gourmet pods are thick, plump and glossy; TK pods are thinner and come in a more accessible size. To choose, read Gourmet or TK vanilla pods: which one to choose?, then discover our Gourmet pods and our TK pods.
